Avocado Chimichurri Sauce



Who doesn't love the vibrant, herbaceous flavors of a classic Chimichurri sauce? Also, who doesn't love a classic avocado puree, crema, or just garnished on every savory bite possible? Well, here you can combine your two loves with the perfect summer sauce to garnish any charred meat off the grill! The avocado gives this chimichurri a creamy texture, while also still having that citrus zesty kick with a little fresh lime juice and green chiles. Make this simple one bowl sauce for your next weekend BBQ and make this your ultimate end of summer staple. Makes 1 1/2 cups.



INGREDIENTS:

  • 1 avocado, seeded and diced

  • 1 bunch cilantro leaves, plus more for garnish

  • 1 bunch parsley leaves

  • 1 Tbsp. fresh oregano leaves

  • 1/2 cup rice wine vinegar

  • 1/2 cup water

  • 1 garlic clove, chopped

  • 1 tsp. chili flakes

  • 1/2 cup olive oil, plus more for texture

  • 1/4 cup lime juice

  • 1/4 cup green chiles

  • salt and pepper

INSTRUCTIONS:

  1. In a medium size mixing bowl, combine all of the above ingredients together.

  2. Using an immersion blender, pulse everything together until the sauce becomes more smooth and fully incorporated. If components seem to be too thick, add a little more water and olive oil.

  3. Taste for seasoning, add more salt and pepper if you like, then pulse a few more times.

  4. Transfer to a serving bowl and garnish with a few cilantro leaves, then serve!
